Welcome to the Department of Nutrition and Health Sciences. You will find in the department faculty who are excellent teachers, researchers dedicated to the discovery of new knowledge and extension faculty who bring the knowledge of the university to the citizens of Nebraska. In addition to the faculty, we have a dedicated staff of secretaries and technologists whose work is vital to the success of the department. We work to create an environment where individual students are valued and do all we can to help students reach their career goals.
Students studying in the department are interested in all aspects of nutrition and health. We offer programs of study in nutrition ranging from nutrients effects on genetics at the cellular level to how to help people develop healthy lifestyles. Students can also study food management and culinology which is the blending of the science of food with culinary arts. Some students are combining their interest in nutrition with exercise science and health. Athletic training is also found in the department
We are the only department in the state of Nebraska that offers an undergraduate degree in dietetics which is the first step students must take to become a Registered Dietitian. We also were the first program in the United States to develop a Culinology undergraduate program. Over 600 undergraduate students and 60 graduate students are currently studying in the department to achieve their career goals.
