My long-term research goal is to characterize health promoting metabolites in natural systems and their interactions with various types of food matrices through the integration of metabolomic and physiochemical approaches. This information is then used as a means (1.) to understand how natural dietary metabolites modulate metabolism at the cellular level to prevent or remediate disease and (2.) to facilitate the development of functional foods and/or nutraceuticals.
