Will Beef Make You a Better Athlete? Establishing the Value of Beef in Sports Nutrition for High School Athletes

Summary: The overall project of the proposal is to establish the value of beef in the diet of high school athletes. It is our working hypothesis that beef presents an optimal dietary source for key nutrients, thereby helping high school athletes reach their maximal athletic performance. We will achieve this objective by addressing the following specific aims:
Aim 1: Adapt a Sports Nutrition Curriculum for Nebraska high school athletes and integrate the curriculum in high school athletes.
Aim 2: Document the impact of this curriculum and on dietary patterns and nutritional knowledge in high school athletes and correlate these changes with improvements in athletic performance.
