Cahoon to present Nutrigenomics Seminar Series, November 30

On November 30, at noon in the East Union, the Nebraska Gateway for Nutrigenomics Seminar Series will continue with a presentation entitled “Unraveling Vitamin E Biosynthesis for Enhanced Antioxidant Content of Crop Plants” given by Edgar Cahoon, professor with the UNL Plant Science Initiative and the Department of Biochemistry. His research focuses on basic and applied research on plant lipid metabolism.

Special Nutrigenomics Seminar, November 16, 11:30 a.m.

Dr. Brandon Davies from the University of California, Los Angeles, a faculty candidate in the Department of Nutrition and Health Sciences, will present a seminar entitled “The Critical Role of GPIHBP1 in Triglyceride Metabolism” at 11:30 on Wednesday, November 16, in the Nebraska East Union, Columbine Room. Dr. Davies’ research explores the role of endothelial cells in triglyceride metabolism, with an emphasis on trans-endothelial transport and the mechanisms by which endothelial cell-specific gene expression is established and maintained in the microvasculature.

Nutrition and Health Sciences sponsors nutrigenomics talk Nov. 9

Henry Thompson, director of the Cancer Prevention Laboratory at Colorado State University, will discuss "Defining the Human Health Benefits of Dry Edible Beans" in a noon, Nov. 9 lecture in the East Union's Garden Room. The lecture is free and open to the public.

His current research investigates the human health benefits of staple food crops, primarily dry beans, potato, wheat and rice. He has played a lead role in defining the field of biomedical agriculture and in establishing the "Crops for Health" program at Colorado State.

CEHS culinology students take top prize at Nebraska Local Foods Network Chef Challenge

Three CEHS culinology students were named winners in a high-energy, high-pressure chef's challenge October 6. The three CEHS students included Sophomore Culinology Michael Garcia, Senior Culinology major Joshua Hobbs, and Senior Culinology major Amanda Vuu. Two other teams participated in the challenge, one from Southeast Community College at Lincoln, and Metro Community College at Omaha.

Study shows diets of low-income families often fall short in nutrition

More than seven in 10 low-income families in a new UNL study struggled to reach adequate levels of nutrition in their diet, researchers said.

When asked to recall food choices from the previous day, only 28 percent of participating parents and caregivers reported meals with adequate amounts of nutrients like vitamins A and C, protein, calcium and iron, according to the study.

Food gone bad? There's an app for that!

A new application available for Apple devices -- iPhone and iPod touch -- helps protect consumers from bad leftovers. The "4-Day Throw Away" application, available now from the App Store, is an extension of the 4-Day Throw Away campaign, which educates consumers about the dangers of foodborne illnesses and the four-day guideline for eating, freezing, or throwing away leftovers.

Campus Recreation is partnering with the Department of Nutrition and Health Sciences to present the Healthy Lifestyles Program. The program pairs participants with junior/senior nutrition and health sciences students, who provide nutrition and fitness coaching.

John Kennedy, CEHS graduate, returns for Alumni Masters Week

John Kennedy, 2005 graduate of the Nutrition and Health Science Department, was selected to participate in Alumni Masters Week, a program meant to connect successful UNL alumni with current students. Kennedy is a corporate chef at Blue Bunny. He joined Wells, the makers of Blue Bunny ice cream, in 2005 as the company's first culinologist. Among his responsibilities are researching, evaluating and implementing new technologies and trends in food, and creating new ice cream-related desserts.

2010 marks the 46th Alumni Masters Week.
